Perfect Scallop Fettucini

This is my newest pasta recipe, and I am obsessed with it! The combination of flavours works so beautifully together, and it takes about 15 minutes to make!

Serves 2 Hungry Munchkins for dinner
2 cloves of garlic
1tsp of butter
½ brown onion
1 ripe tomato
200g of fresh scallops
2 handfuls of fresh parsley
2tbs of cream,
1/3 of a lemon for juice,
fresh fettucini
parmesan for on top

How it’s done:
1. Chop the onion and garlic finely, and chop the parsley and tomato up roughly. Put a pot of hot water with a dash of oil and salt on to boil for the pasta.
2. Fry the onion, garlic and tomato in a dash of oil and a teaspoon of butter until caramelized lightly.
3. Add the scallops and some of the parsley.
4. Start to cook the pasta when the water has come the boil. -Note: If your pasta is fresh it will only take a few minutes to cook.
5. When the scallops are looking firm and cooked, add the remaining parsley and a tablespoon of cream.
6. Drain the pasta and mix it through the scallop sauce.
7. Serve with parmesan on top
