Smoked Salmon Udon Noodle Salad

Hi Foodies,
This is a really delicious noodle salad great for a lunch for 4 or a quick dinner for 2. It takes 15 minutes to put together and about 1 minute to scoff down!

180g udon noodles (boiled and strained)
100g of smoked salmon
4 spring onions (shallots)
2 tbs of chopped chives
2 tsp of capers
4 handfuls of spinach (to be wilted)
1 cucumber (quartered and sliced)
1 lemon (half for juice, half for slices)
1 tsp of crème fraiche or sour cream
Freshly ground pepper

To start off, bring some water to the boil and then pop 180g of udon noodles in to boil for 8 minutes. Whilst the noodles are cooking;

1.Boil the kettle to wilt the spinach

2.Peel a cucumber, quartered lengthways, and then slice it into long thin pieces.

3.Slice up the smoked salmon.

4.Thinly slice up some spring onion (shallots) and the chives.

5.Drain the udon noodles, and pour the boiled water over the spinach to wilt it.

6.Mix the udon noodles with the spinach and the crème fraiche.

7.Add the remaining ingredients and mix.

8.Add the lemon juice, and half a teaspoon of the caper juice if you bought them in a wine vinegar.

9.Serve with a slice of lemon and enjoy!!!
