Avocado and Feta on Sourdough


Avocado, Feta and Smoked Salmon or Chorizo on Sourdough Toast
Perfect for 2 for dinner or 4 for lunch


This is a favourite of mine which I use as a quick lunch with friends or an easy dinner for two. Avocado and feta is great on sourdough by itself, but amazing with smoked salmon or chorizo sausage!

Ingredients:
1 avocado
150g of feta
60g of smoked salmon
1 chorizo sausage sliced on an angle
½ a lemon
4 slices of good quality sourdough bread toasted
Butter or a drizzle of good quality olive oil
Salt and cracked black pepper
Here's how it's done:
1. Mash up the avocado and add the crumbled feta to the avocado
2. Add half the lemon juice and salt and pepper and mix together
3. Toast the bread
4. Cook the Chorizo sausage in a pan without any oil (as it has enough fat in it)
5. Butter the toast or drizzle with a good quality olive oil
6. Dollop the avocado feta mix on the sourdough and top with either smoked salmon slices or chorizo.
7. Squeeze some more lemon juice on the two slices and add salt and cracked black pepper.

  1. This was incredible! Such a simple recipe but with an edge of sophistication. I tried mine with a kalamata olive baguette which I pre-grilled with he suggested olive oil- such a fabulous snack! Definitely trying this one again x
